The Columbian Exchange: Crops, Animals, and People

The Columbian Exchange was the most consequential biological event in modern history. It was the term Alfred W. Crosby coined in a 1972 article and a 1972 book of the same name, and it has since become one of the central organizing concepts in world history. Crosby’s insight, which he developed further in Ecological Imperialism (1986) and The Columbian Exchange Revisited (2012), was that the biological consequences of 1492 — the transfer of plants, animals, and pathogens between the previously isolated hemispheres — were, in the long run, more important than the political and economic consequences. The silver of Potosí paid for Spanish wars, but the potato paid for the population of Ireland. The conquest of the Aztecs made Cortés famous, but the smallpox that preceded him made the conquest possible.

What Crosby’s framework captures, and what subsequent scholarship has refined, is the asymmetry of the exchange. The Eastern Hemisphere gave the Americas a suite of plants, animals, and diseases that transformed the hemisphere: wheat, rice, sugarcane, horses, cattle, pigs, sheep, and the pathogens that killed perhaps 80 to 95 percent of the indigenous population in the worst-affected regions. The Western Hemisphere gave the rest of the world a different suite: maize, potatoes, sweet potatoes, cassava, tomatoes, peppers, tobacco, cacao, and the turkey. Some of these crops — potatoes, maize, cassava — supported the largest sustained increase in human population in the early modern period. Others — sugar, tobacco — drove the brutal Atlantic slave trade. The Columbian Exchange was, in short, both the foundation of modern global population growth and the engine of the largest forced migration in human history.

The Pre-Columbian Separation

For roughly 10,000 to 15,000 years before 1492, the Old World and the New World had developed their food economies in complete isolation. The geographic reason was the simple fact that the Atlantic and Pacific Oceans were impassable to humans before the development of oceangoing sailing ships. The Bering land bridge that had once connected Asia and North America had been submerged at the end of the last Ice Age, and the people who had crossed it brought with them only a fraction of Old World domesticated species — most notably, the dog.

The result was two completely separate suites of domesticated plants and animals. The Old World had wheat, rice, barley, oats, rye, sugarcane, grapes, olives, peaches, pears, citrus, bananas, coffee, and a long list of vegetables, plus the major domesticated mammals: cattle, pigs, sheep, goats, horses, donkeys, camels, water buffalo, and chickens. The New World had maize, potatoes, sweet potatoes, cassava, tomatoes, peppers, squash, pumpkins, beans, peanuts, cacao, tobacco, pineapples, vanilla, and rubber, plus a much smaller set of domesticated animals: the llama, alpaca, guinea pig, and turkey in the Andes, and the dog in Mesoamerica and North America. The two lists barely overlapped. Wheat was unknown in the pre-Columbian Americas; maize was unknown in pre-Columbian Eurasia. There were no pigs, horses, or cattle in the pre-Columbian Americas; there were no turkeys, llamas, or guinea pigs in pre-Columbian Europe.

The Movement of Crops

The most familiar legacy of the Columbian Exchange is the global redistribution of food plants. Within a few generations of Columbus’s voyages, dozens of crops had crossed the Atlantic in both directions, transforming diets everywhere they went. From the Old World to the New

European and Asian crops transformed American agriculture after 1492. Wheat became the dominant bread grain in temperate regions from Chile to Canada, displacing indigenous crops in many areas. Rice, introduced by Spanish and Portuguese settlers and by enslaved West Africans, became a staple in the Carolinas, Louisiana, and Brazil. Sugarcane, transplanted from the Mediterranean to the Caribbean and Brazil, fueled the rise of plantation economies and underwrote the Atlantic slave trade. Bananas, originally from Southeast Asia, arrived in the Americas via the Canary Islands and became a major tropical crop. Coffee, a native of Ethiopia, became the dominant cash crop of Brazil, Colombia, and Central America.

From the New World to the Old

The reverse flow was at least as consequential. Potatoes, native to the Andes, were brought to Europe in the late 1500s and spread across the continent over the next two centuries. They produced more calories per acre than any Old World crop in cool, moist climates, and they could be grown on marginal land, enabling the population explosions of Ireland, Germany, Poland, and Russia. The Irish dependence on the potato, which proved so tragically vulnerable to blight in the 1840s, was a direct legacy of the Columbian Exchange.

Maize (corn) was even more globally significant. Adopted across southern Europe, Africa, and much of Asia, it became a dietary mainstay in regions from Portugal to the Philippines. In Africa, maize has been one of the most important food crops since the 17th century. Cassava (manioc), carried to Africa by Portuguese traders in the 16th century, became the principal starch for much of sub-Saharan Africa, particularly in the tropical forest zones. Sweet potatoes, which spread widely through China in the late Ming and Qing dynasties, supported significant population growth in East Asia.

Tomatoes, native to the Andean region, were brought to Europe in the 16th century. Initially regarded with suspicion, they eventually became central to the cuisines of Italy and Spain. Chili peppers, also American in origin, transformed cooking across Africa, India, China, Korea, and Southeast Asia. Cacao, the source of chocolate, was prized by the Aztecs and Maya and became a luxury good in Europe after the Spanish conquest. Tobacco, another American native, became one of the most important cash crops of the colonial era. Peanuts, originally South American, became a major crop in West Africa and were later carried to North America by enslaved Africans.

The Movement of Animals

The exchange of domesticated animals was equally consequential, although less widely appreciated than the movement of plants.

Old World Animals in the New World

Europeans brought to the Americas a suite of large domesticated mammals that had no New World equivalents: horses, cattle, pigs, sheep, goats, and donkeys. Of these, the horse had the most dramatic cultural impact. Native Americans had never seen horses before 1492; within a few generations of the introduction of escaped or traded horses, mounted cultures had emerged across the Great Plains, the Pampas, and Patagonia. The Lakota, Comanche, Apache, and many other peoples became formidable mounted warriors. The gaucho culture of Argentina, the vaquero tradition of Mexico and the American Southwest, and the Plains Indian horse culture all date from this period.

Pigs proliferated in feral populations throughout the Caribbean and the Americas, with significant ecological consequences. They rooted up native vegetation, preyed on native animals, and disrupted island ecosystems so severely that the Caribbean is sometimes cited as one of the earliest examples of European-style ecological imperialism. Cattle became a mainstay of the ranching economies of the Spanish Americas, particularly in Mexico, the Pampas, and the Caribbean lowlands. Sheep were raised for wool and meat in temperate regions. Chickens, while less glamorous, became a near-universal source of protein across the Americas.

Honeybees, though not strictly domesticated, also accompanied Europeans to the Americas. Africanized (“killer”) bees in the Americas today descend from bees brought to Brazil in the 1950s, but the original European honeybee was present from the earliest colonial period. Native Americans sometimes called them “the white man’s flies.”

New World Animals in the Old World

The flow in the other direction was more limited, in part because the New World had fewer large domestic animals. The most important transfers were the turkey, which became a major poultry bird in Europe, and the guinea pig, which remained largely a South American food animal. The llama and alpaca were not successfully introduced to the Old World, despite Spanish attempts to do so.

The Movement of People

The biological exchange had an enormous human component, both voluntary and forced. While not strictly a biological transfer in the same sense as plants and animals, the migration of Europeans, Africans, and (to a lesser extent) Asians across the Atlantic had profound demographic, cultural, and genetic consequences.

Voluntary European Migration

Between 1500 and 1800, perhaps 2 to 3 million Europeans migrated voluntarily to the Americas. The largest groups were the Spanish, who settled throughout Latin America; the Portuguese, who colonized Brazil; the English, who established colonies in North America and the Caribbean; the French, who settled in Canada, Haiti, and parts of South America; and the Dutch, who held temporary colonies in the Americas before losing most of them to the English. Smaller migrations of Germans, Irish, Scots, Italians, and others contributed to the ethnic and linguistic diversity of the New World.

The causes of this migration were complex. Many migrants were economic refugees fleeing poverty, famine, or religious persecution. Others were political exiles, criminals transported to penal colonies, or indentured servants bound by contracts to years of labor. The long-term result was the creation of European-majority societies throughout the Americas, particularly in the temperate regions where indigenous populations had been most devastated by disease.

Forced African Migration

The forced migration of Africans to the Americas dwarfs the voluntary migration in scale. From the 16th to the 19th centuries, an estimated 12 to 15 million Africans were forcibly transported across the Atlantic as enslaved laborers. The 12.5 million figure from David Eltis’s Atlantic Slave Trade: A Census (2007) is the most authoritative modern estimate, although older estimates run as high as 15 million. Roughly 10 to 11 million survived the infamous Middle Passage, the second leg of the triangular trade that carried manufactured goods to Africa, enslaved people to the Americas, and American sugar, tobacco, and other commodities to Europe.

The African diaspora reshaped the demographics, cultures, and economies of the Americas. African-descended populations became a majority or near-majority in the Caribbean, Brazil, and parts of the southern United States, and a substantial minority in nearly every American country. African cultural practices — music, dance, religious traditions, foodways, languages — became central to New World culture, especially in regions with large enslaved populations. The cultural fusion of African, European, and indigenous elements produced new and distinctively American traditions, from jazz and blues in the United States to capoeira in Brazil to Vodou in Haiti.

The Exchange of Pathogens

No discussion of the Columbian Exchange is complete without acknowledging the role of disease. The most consequential element of the biological transfer from the Old World to the New was the suite of pathogens that devastated indigenous populations. The most important disease was smallpox, which repeatedly swept through the Americas and killed millions. The 80 to 95 percent figure for the worst-affected regions is a serious scholarly range, not a precise measurement; the qualitative conclusion is undisputed.

Ecological and Long-Term Consequences

The ecological consequences of the Columbian Exchange are still unfolding. The movement of plants, animals, and pathogens has been described as the beginning of the modern process of biological globalization. Today, the same forces — commercial shipping, air travel, global trade — continue the process Crosby identified, often with similar results: invasive species, emerging diseases, and the homogenization of regional ecologies.

The Columbian Exchange is one of the foundational concepts in the modern discipline of environmental history, and Crosby’s framework has been extended by a generation of scholars including Elinor Melville, Stuart McCook, and Virginia Anderson. Some historians have argued that the Columbian Exchange was, eventually, a net benefit to humanity: more food, more species, more productive agriculture, larger populations. Others have emphasized the human cost, particularly the catastrophic loss of indigenous life and the centuries of slavery that followed. The debate continues, but the magnitude of the exchange is beyond dispute.
